Food Well Alliance: We are connecting organizations that are working to make metro Atlanta's local food system resilient, including production, processing, distribution, consumption and recovery.
1 cucumber, chopped (small or chunky, your choice)
1 tomato, chopped (small or chunky, your choice)
1 bell pepper, chopped (small or chunky, your choice)
1 can chickpeas, drained and rinsed
4 sprigs of parsley, chopped (include stems to reduce waste)
Dressing
Juice of 1 lemon
Equal amount of olive oil to lemon juice
Oregano, salt, pepper to taste
Mix dressing ingredients together. Set aside.
Add all chopped veggies, parsley and chickpeas to a medium/large bowl.
Pour dressing over the top. Adjust seasoning to taste.
Tastes best chilled.
Lasts 3 days in the fridge, veggies will soften, but the flavors marinade together. Delicious!
